1980 911SC Oil Level

Vehicle Information: Model: 911SC; Year: 1980; Body Type: Coupe; Total Mileage: 50000;

I just had my oil changed by a local shop about a week and 1/2 ago. I went thru a tank of gas and thought I would check the oil. In checking the oil I found the reading at the full mark. The question I have is should I take it back to the shop and have them drain off a quart? I suspect they did have the engine at operating temp when they did the oil change. Another ? is what is the correct operating range. I have seen it from about 180 to 205 depending on the weather
