1980 911SC Repaint

Vehicle Information: Model: 911; Year: 1980; Body Type: Coupe; Total Mileage: over 250,000;

By father and I are about to embark on the restoration of his 80' SC. The car has over 19 to 20 mils of paint on it via 4 paint jobs over the years and the last one is already coming off. My question is: would it not make sense to use a chemical stripper in order to avoid removing the galvanization on the body metal?If so, I'm guessing I'd still have to "put a scratch" in the metal before shooting epoxy? Maybe 80 grit? Does that hurt the galv? The process will be: metal->epoxy->primer/surfacer->bc->ccSound OK?
