1985/2 944 Idle Stabilization

Vehicle Information: Model(924/944): 944; Year: 1985; Engine (type, size, modifications): 2.5; Total Mileage: 300,000 odometer-rebuilt 250K;

I have a high milage 944 that has been a very good car.Recently Every time I wish to use the A/C ,which has been converted, the idle has to be turned up (to 1100rpm)to keep the idle from dropping and stalling out the car at stop lights. During the winter, the idle has to be dropped (back to 950rpm) so the car doesn't idle so hard all the time. My question is this, is adjusting the idle all the time always necessary, or is the car supposed to be able to compensate for this on its own? Our mechanic just does this every time,which he says is hard because our idle valve works so well and wants to maintain 950 rpm.When we don't use the A/C it is a bit of a headache to have it idling so high during the we'd like to know where to look,if,this is not normal.?
