2006 997S Oil temperature vs coolant temperature

Vehicle Information: Model : 997 S; Year: 2006; Mileage: 3100;

I find it interesting that my '06 997S runs with the coolant temperature at 175 degrees while the oil temperature runs at a little over 200. That's on the street. On the track, the oil temperatue goes up to about 260 (not surprising), but the coolant is rock steady at 175. I'm assuming that these temperatures are normal (although 175 seems kind of low to me) and that the delta between coolant and oil is normal, too - is it? And also, what accounts for the difference between the two?
