Brake Pad and Rotor Replacement

Vehicle Information: Year: 2000; Engine (type, size, modifications): Stock; Total Mileage: 38k; Transmission: Manual;

I recently took my car to the dealer for the 40K service and they recommended that my front brake pads and rotors be replaced. I hear no grinding while driving, the brake light has not illuminated. I asked the service rep if he could just turn the rotors and he said the rotors are made of very soft material and the dealer will not turn the rotors only replace them. I have never heard of such a thing so I am writing because I need your advice. The rotors on this car have never been turn the car has 38K in mileage and the rotors are not warped. Is this gentlemen giving me accurate information about Porsche policy or turning rotors and is it safe to turn (cut) the rotors?
