Checking Oil Level on 993

Vehicle Information: Year: 1998; Body Type: Coupe; Total Mileage: 28,500;

I purchased my first Porsche, a 1998 993 back in April and would like to know what's the best method to check the engine oil level. Before the changing the oil the dashboard oil gauge would barely show the level. After the change it went to the top until I put about 1k miles on it. The dip stick shows oil on the twisted section (at least half way) but the gauge barely gets above the red. I do check it after an hour drive, on level ground, but still the same result. Is the stick the most accurate measurement of the car's oil level? I'm concerned about over filling it.
