Difficult to start unless driven daily

Engine

Model: 928, Year:1982, Mileage:78000, Type of use:Both Street & Track
If I drive my 928 very regularly, almost daily, she runs terrific. If I let her sit for a week or so, my luck at starting the car declines quickly. If I use starting fluid, it fires up for a few seconds until the fluid has burned off, then dies, so I know that I have ignition. I can hear the fuel pump run after attempting to start, and if it starts, it runs normally.I can re-try daily for days or weeks and suddenly, it starts as if nothing has been wrong. If I keep starting it daily, all is well. What can I repair/replace to address this unpredictable starting problem. I just missed a track event because I let the car sit for 4 days before the event, and subsequently couldn't get it started to drive to the track event. Grrr.... I have already replaced the green service wire, oxy sensor, fuel filter, smog pump filter, air filter...
