Engine temperature

Vehicle Information: Model: 356A; Year: 1958; Body Type: Coupe; Engine (type, size, modifications): 1962 replacement case with big bore; Total Mileage: 250,000;

I am the original ownerof a 1958 coupe. The engine was professionally overhauled in 1962 at 75,000 miles and a replacement case had to be used because of a catastrophic failure. I overhauled the engine again about 50,000 miles and 15 years ago and used a big bore kit. When traveling 80 mph or so on a hot day (80+) the temperature goes well past the center and heads toward the right. When it gets to the green on the right I back off and it tends to cool down. What recommendations do you have to improve the cooling during these operating conditions?
