oil filter and oil flow

Vehicle Information: Model: 1960 356 1968 912; Year: 1960 1968; Body Type: Coupe; Engine (type, size, modifications): 356 has big bore kit and webers, 912 has webers; Total Mileage: each about 108,000;

My 356 runs 250 degrees with a gauge in the dipstick hole. I've tested it and its accurate. with a thermal gun on the filter case its about 195. isn't the oil in the sump the hottest? Also, I can't seem to figure out the oil routing. Would a synthetic like royal purple or mobil 1 help the temp problem? Would a full flow oil filter like the Precision Matters filter help? The car doesn't leak any oil now and runs well. currently, I use castrol 20-50.It does have a new oil cooler.
